Last night’s dinner was special for Mark’s birthday. It was wonderful and involved lots of grilled things. (Asparagus and potato & onion packets among other things.) Tonight I wanted good filling and easy. So I pulled out an old recipe I used a lot when the kids were young and money was tighter. It uses predominantly pantry items so it’s one I can easily put together with what I have on hand. In an odd twist of fate I did not have any black beans in my pantry, so I used pinto beans. But it was wonderful. I added a dollop of vegan sour cream. The kids ate it happily and willingly.
